The key to this dish lies in selecting the right ingredients that are both fresh and accessible. Growing up, I learned from my mom that even the simplest pantry staples can transform a meal, and this recipe is no exception.
- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup orange juice
- Zest of 1 orange
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 cup chicken broth
If fresh cranberries aren’t available, frozen ones work just as well. You can also substitute honey with maple syrup for a different twist.
Instructions
- Preheat your oven to 375°F (190°C).
- In a small saucepan, combine cranberries, orange juice, orange zest, honey, and chicken broth. Bring to a simmer over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens, about 10 minutes.
- While the sauce simmers, heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt, pepper, and thyme.
- Sear the chicken breasts in the skillet for 3-4 minutes on each side until golden brown.
- Pour the cranberry-orange sauce over the chicken. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through.
