- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup chicken broth
- 2 tablespoons chopped fresh parsley (optional)
Feel free to swap the Parmesan with any hard cheese you have on hand, and if you’re out of chicken broth, water with a dash of extra seasoning works just fine.
Instructions
- Preheat your oven to 375°F. This gives you a few moments to clear the counters or, if you’re like me, sip on a cup of coffee while it heats up.
- In a medium bowl, blend the cream cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until smooth. This is where the magic begins—my mom always said a good mix can turn the simplest of ingredients into something memorable.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and sear for about 3-4 minutes on each side until they’re golden brown. Remember, we’re not looking for perfection, just a nice color.
- Remove the skillet from heat and pour the chicken broth around the chicken breasts. Dollop the cream cheese mixture on top of each piece of chicken, spreading it slightly.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and slightly golden.
- Sprinkle with chopped parsley before serving, if desired. It’s those little touches that make a dish feel special, like my dad would do when he told stories from his own childhood around our crowded dinner table.
