- 12 ounces of penne pasta
- 2 tablespoons of olive oil
- 1 pound of chicken breast, diced
- 3 cloves of garlic, minced
- 2 cups of broccoli florets
- 1 cup of heavy cream
- 1 cup of chicken broth
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
- 1 teaspoon of Italian seasoning
- Red pepper flakes (optional, for a bit of heat)
If you’re out of Parmesan cheese, feel free to substitute it with Pecorino Romano or even a mix of shredded mozzarella for a gooey twist.
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt, pepper, and Italian seasoning. Cook for 6-8 minutes, until the chicken is golden and cooked through.
- Add the minced garlic to the skillet with the chicken. Sauté for about 1 minute, until fragrant.
- Toss in the broccoli florets and pour in the chicken broth. Cover and steam the broccoli for 3-4 minutes, until tender yet vibrant green.
- Reduce the heat to low, then pour in the heavy cream. Stir in the Parmesan cheese, allowing it to melt into a luxurious sauce.
- Add the cooked pasta to the skillet, tossing everything to coat. If you like a little kick, sprinkle in some red pepper flakes.
- Let the pasta simmer in the sauce for 2-3 minutes, allowing the flavors to meld beautifully.
For a little extra flair, finish off with a sprinkle of fresh parsley or basil, if you have it on hand.
