- 12 jumbo pasta shells
- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C). Cook the pasta shells according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until golden brown, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant.
- In a bowl, combine ricotta, 1/4 cup of Parmesan, salt, and pepper. Stir in the cooked mushrooms and garlic.
- Fill each pasta shell with the mushroom mixture and place them in a baking dish.
- Pour heavy cream over the shells, sprinkle with remaining Parmesan, and bake for 20-25 minutes until bubbly.
- Garnish with chopped parsley before serving.
