The key to this dish lies in selecting the right ingredients, much like my mom did with her magical can of tomatoes. Quality matters, but simplicity is king. Choose ingredients that are fresh and vibrant to bring out the best in this dish.
- 12 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup chopped cucumber
- 1/2 cup sliced black olives
- 1/2 cup shredded mozzarella cheese
- 1/4 cup finely chopped red onion
- 1/2 cup Italian dressing
- 1/4 cup mayonnaise
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, black olives, mozzarella cheese, and red onion.
- In a small bowl, whisk together the Italian dressing and mayonnaise until smooth and creamy.
- Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
- Sprinkle with chopped fresh parsley, and season with salt and pepper to taste. Serve immediately or chill in the refrigerator for an hour for enhanced flavors.
