The key to this dish lies in selecting the right ingredients, just like how my mom would magically transform a simple pantry into a feast.
- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving
You can substitute the spinach with kale or swap the heavy cream for a lighter option if you prefer.
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Add the diced onion and cook until translucent, about 3 minutes. Stir in the garlic and cook for another minute until fragrant.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the pot. Bring to a simmer.
- Stir in the heavy cream and gnocchi. Cook until the gnocchi are tender, about 3-5 minutes.
- Add the spinach and stir until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese.
