Scale
The key to this dish lies in selecting the right ingredients that balance simplicity with flavor. I’ve learned to keep my pantry stocked with essentials that work for various meals, and this recipe is no exception. Here’s what you’ll need:
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sliced pepperoncini peppers
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Feel free to swap heavy cream for half-and-half if you’re looking for a lighter option or use banana peppers as a milder substitute for pepperoncini.
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Add chicken broth, scraping up any browned bits from the bottom of the pan. Stir in heavy cream, Italian seasoning, and pepperoncini.
- Return chicken to the skillet and let simmer for 10-12 minutes, or until chicken is cooked through and sauce has thickened.
- Garnish with fresh parsley before serving.
