The key to this dish lies in selecting the right ingredients, ones that bring comfort and joy, much like those cozy family dinners from my childhood.
- 2 large boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 4 large flour tortillas
- 1 cup Caesar dressing
- 2 cups shredded romaine lettuce
- 1/2 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the chicken breasts into strips. Season with salt and pepper.
- In a shallow dish, combine the panko breadcrumbs and Parmesan cheese.
- Dip each chicken strip in olive oil, then coat in the breadcrumb mixture, pressing to adhere.
- Place the chicken strips on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and cooked through.
- Warm the tortillas in a dry skillet over medium heat for 30 seconds on each side.
- Spread a generous layer of Caesar dressing on each tortilla.
- Top with crispy chicken, shredded lettuce, and cherry tomatoes. Roll up tightly.
- Slice each wrap in half and serve immediately.
