- 2 pounds of carrots, peeled and cut into 2-inch pieces
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- Fresh parsley, chopped, for garnish
- Optional: 1 tablespoon honey for a touch of sweetness
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large pot, bring water to a boil. Add the carrot pieces and boil for about 10 minutes, or until they are tender enough to smash easily with a fork.
- Drain the carrots and let them cool slightly. Spread them out on the prepared baking sheet.
- Using the bottom of a glass or a potato masher, gently smash each carrot piece to flatten them slightly.
- Drizzle the smashed carrots with olive oil, then sprinkle with salt, pepper, and garlic powder. Toss them gently to coat.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the edges are crispy and golden brown.
- If you’re using honey, drizzle it over the carrots during the last 5 minutes of baking.
- Remove from the oven and garnish with chopped fresh parsley before serving.
