  • 2 pounds of carrots, peeled and cut into 2-inch pieces
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Fresh parsley, chopped, for garnish
  • Optional: 1 tablespoon honey for a touch of sweetness

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large pot, bring water to a boil. Add the carrot pieces and boil for about 10 minutes, or until they are tender enough to smash easily with a fork.
  3. Drain the carrots and let them cool slightly. Spread them out on the prepared baking sheet.
  4. Using the bottom of a glass or a potato masher, gently smash each carrot piece to flatten them slightly.
  5. Drizzle the smashed carrots with olive oil, then sprinkle with salt, pepper, and garlic powder. Toss them gently to coat.
  6. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the edges are crispy and golden brown.
  7. If you’re using honey, drizzle it over the carrots during the last 5 minutes of baking.
  8. Remove from the oven and garnish with chopped fresh parsley before serving.
