- 8–10 small to medium-sized potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil

Instructions
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Wash the potatoes and place them in a large pot. Cover with water and bring to a boil. Cook until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on the prepared baking sheet.
- Using the bottom of a glass, gently press down on each potato to smash them, keeping them in one piece.
- Drizzle the smashed potatoes with olive oil, and sprinkle with garlic powder, onion powder, salt, and pepper.
- Bake in the oven for 20-25 minutes, or until the edges are crispy and golden brown.
- Remove from the oven and spoon marinara sauce over each potato. Top with mozzarella and Parmesan cheese, then sprinkle with oregano and basil.
- Add any optional toppings you desire, then return to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
