- 4 boneless, skinless chicken breasts
- 1/2 cup chicken broth
- 1/3 cup fresh lemon juice
- 1/4 cup capers, drained
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped fresh parsley, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat and brown the chicken breasts for about 3-4 minutes on each side.
- Transfer the chicken to a slow cooker.
- In the same skillet, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
- Add the chicken broth, lemon juice, and capers to the skillet, scraping up any browned bits from the bottom.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on low for 4-5 hours or until the chicken is tender.
- Garnish with fresh parsley before serving.
