  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 3 cups fresh spinach
  • 1 package (20 oz) refrigerated cheese tortellini
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Feel free to substitute fresh spinach with kale or use rotisserie chicken if you’re short on time.

Instructions

  1. Place the chicken breasts in the bottom of your CrockPot.
  2. Pour in the chicken broth and add the diced tomatoes, including their juices.
  3. Sprinkle the Italian seasoning over the mixture and add salt and pepper to taste.
  4. Cover and cook on low for 6 to 7 hours, or until the chicken is cooked through and tender.
  5. Remove the chicken, shred it using two forks, and return it to the CrockPot.
