The key to this dish lies in selecting the right ingredients, just like my mom would do, transforming simple staples into something magical.
- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 3 cups fresh spinach
- 1 package (20 oz) refrigerated cheese tortellini
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
Feel free to substitute fresh spinach with kale or use rotisserie chicken if you’re short on time.
Instructions
- Place the chicken breasts in the bottom of your CrockPot.
- Pour in the chicken broth and add the diced tomatoes, including their juices.
- Sprinkle the Italian seasoning over the mixture and add salt and pepper to taste.
- Cover and cook on low for 6 to 7 hours, or until the chicken is cooked through and tender.
- Remove the chicken, shred it using two forks, and return it to the CrockPot.
- Stir in the heavy cream, fresh spinach, and tortellini.
- Cook for an additional 30 minutes on high, or until the tortellini is tender.
- Sprinkle with Parmesan cheese just before serving.
