- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large onions, thinly sliced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon butter
- 1 cup shredded Gruyère cheese
Feel free to substitute Gruyère with Swiss cheese if you prefer. And if you’re feeling adventurous, a splash of dry sherry in the broth adds a lovely depth of flavor.
Instructions
- In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic powder, salt, and pepper. Mix until just combined.
- Form the mixture into 1-inch meatballs and set aside.
- In a skillet, melt butter over medium heat. Add onions and sauté until they are caramelized, about 15-20 minutes.
- Transfer the onions to your crockpot. Add beef broth and Worcestershire sauce, stirring to combine.
- Gently place the meatballs into the crockpot, making sure they are submerged in the broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, sprinkle Gruyère cheese over the top and let it melt for about 10 minutes.
