- 1 pound beef sirloin, thinly sliced
- 2 cups mushrooms, sliced
- 1 tablespoon curry powder
- 1 cup coconut milk

- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped

Instructions
- In a large skillet, heat a tablespoon of oil over medium-high heat. Add the beef slices and sauté until browned, about 4-5 minutes. Remove and set aside.
- In the same skillet, add mushrooms and cook until they release their moisture and start turning golden, approximately 5-7 minutes.
- Stir in the curry powder, ensuring the mushrooms are well coated.
- Add coconut milk, peanut butter, soy sauce, and lime juice to the skillet. Stir until the peanut butter is fully incorporated, creating a creamy sauce.
- Return the beef to the skillet, reduce heat to low, and let simmer for an additional 5 minutes, allowing the flavors to meld.
- While the beef is simmering, prepare the mango salsa. In a bowl, mix diced mangoes, red onion, and cilantro. Set aside.
- Serve the curried beef and mushrooms with a generous scoop of mango salsa on top.
