The key to this dish lies in selecting the right ingredients that will blend harmoniously in your crockpot. Freshness is paramount, as it makes all the difference in the final flavor.
- 2 pounds of boneless, skinless chicken breasts
- 3 bell peppers (a mix of colors), sliced
- 1 large onion, sliced
- 1 packet of fajita seasoning mix
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- Juice of 1 lime
- 8 flour tortillas
- Optional toppings: sour cream, diced avocado, shredded cheese
If you’re out of chicken, beef or shrimp can work as a great substitute. And if you’re a spice lover like my mom, feel free to add some jalapeños for an extra kick!
Instructions
- Start by placing the chicken breasts at the bottom of your crockpot.
- Add the sliced bell peppers and onions on top of the chicken.
- In a small bowl, mix together the fajita seasoning, chicken broth, olive oil, and lime juice. Pour this mixture over the chicken and vegetables.
- Set your crockpot to low and cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and the flavors have melded beautifully.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot and stir to combine with the vegetables and sauce.
- Warm the flour tortillas and serve with your choice of toppings.
