The key to this dish lies in selecting the right ingredients, simple yet full of flavor. Growing up, I learned the power of fresh and quality ingredients from my parents. Here’s what you’ll need:
- 12 ounces spaghetti pasta
- 6 cloves garlic, thinly sliced
- 1/4 cup extra-virgin olive oil
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley
- 1/2 cup freshly grated Parmesan cheese
If you’re out of fresh parsley, dried parsley works in a pinch. And if you’re feeling adventurous, toss in a handful of cherry tomatoes for a pop of color and sweetness.
Instructions
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the garlic slices and red pepper flakes, sautéing until the garlic is golden brown and aromatic, about 2-3 minutes. Watch carefully to avoid burning.
- Reserve 1 cup of pasta water, then drain the spaghetti and add it to the skillet, tossing to coat in the garlic oil.
- Gradually add reserved pasta water, a few tablespoons at a time, until the spaghetti is glossy and coated. Season with salt and pepper to taste.
- Remove from heat and stir in the chopped parsley and Parmesan cheese. Serve immediately, garnished with more parsley and Parmesan if desired.
