- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 (15-ounce) can pumpkin puree
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- Optional: 1/4 teaspoon cayenne pepper for heat
If you’re out of black beans, feel free to substitute with kidney beans or chickpeas. Remember, cooking is all about making it work with what you have!
Instructions
- Heat the olive oil in a large pot over medium heat. Add the ground chicken and cook until browned, about 5-7 minutes. Remove any excess fat.
- Add the diced onion, garlic, and bell pepper to the pot. Cook until the vegetables are tender, stirring occasionally, about 5 minutes.
- Pour in the chicken broth, pumpkin puree, and diced tomatoes. Stir to combine.
- Add the black beans, cumin, chili powder, salt, and pepper. If you like a bit of heat, sprinkle in the cayenne pepper.
- Bring the mixture to a simmer. Reduce the heat to low and let it cook for 20-25 minutes, allowing the flavors to meld together.
- Taste and adjust seasoning if necessary. Serve hot and enjoy!
