- 1 pound of Italian sausage (mild or spicy, depending on your preference)
- 1 tablespoon of olive oil
- 1 large onion, diced
- 3 cloves of garlic, minced
- 4 medium potatoes, peeled and cubed
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1 teaspoon of dried thyme
- 1 teaspoon of salt (adjust to taste)
- 1/2 teaspoon of black pepper
- 1 cup of chopped kale or spinach
- Optional: 1/4 teaspoon of red pepper flakes for a little heat
If you don’t have heavy cream, you can substitute with half-and-half or even milk for a lighter version. As for the sausage, feel free to use turkey sausage or a plant-based alternative if you’re looking for a healthier twist.
Instructions
- In a large pot over medium heat, add the olive oil and brown the sausage. Break it into smaller pieces as it cooks, about 5-7 minutes.
- Remove the cooked sausage and set it aside, leaving any drippings in the pot. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cubed potatoes, chicken broth, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are tender, use a potato masher or the back of a spoon to mash some of the potatoes in the pot for a creamier texture.
- Return the cooked sausage to the pot, then stir in the heavy cream and kale. Let it simmer for another 5 minutes until the kale is wilted and everything is heated through. If you like a bit of heat, sprinkle in the red pepper flakes.
- Taste and adjust seasoning if necessary. Serve hot and enjoy!
