Ingredients
Scale
- 1 and 1/2 cups all-purpose flour
- 3 and 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 and 1/4 cups milk
- 1 egg
- 3 tablespoons melted butter
- 1 teaspoon vanilla extract (optional but recommended)
These ingredients are likely already in your pantry, which is a huge win for busy mornings. If you’re out of milk, feel free to use any milk substitute you have on hand, like almond or oat milk. They work just as well.
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar. This step is crucial for evenly distributing the baking powder, which is the secret behind those fluffy pancakes.
- In a separate bowl, beat the egg and then mix in the milk and melted butter. Add the vanilla extract here if you’re using it. This combination of wet ingredients will make your pancakes rich and flavorful.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Lumps are okay! Overmixing will make your pancakes tough, and nobody wants that.
- Heat a lightly oiled griddle or frying pan over medium-high heat. I always tell my kids that when a few drops of water dance on the surface, it’s ready.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. When you see bubbles forming on the surface, it’s time to flip—about 1-2 minutes per side.
- Cook until the pancakes are golden brown on both sides and cooked through. Serve immediately with your choice of toppings.
