- 8 slices of crusty French bread or ciabatta (substitute with sourdough if desired)
- 1 pound thinly sliced roast beef (store-bought deli style works great)
- 8 slices provolone cheese (Swiss or mozzarella are good alternatives)
- 4 tablespoons unsalted butter, softened
- 2 cups beef broth (homemade or low-sodium store-bought)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and freshly ground black pepper, to taste
- Optional: fresh thyme or rosemary sprigs for added aroma in the broth
Instructions
- In a medium saucepan, combine the beef broth, Worcestershire sauce, garlic powder, onion powder, and a pinch of salt and pepper. Add fresh thyme or rosemary if you’re feeling fancy. Bring to a gentle simmer over medium heat, then reduce the heat to low to keep warm while you prepare the sandwiches.
- Preheat a large skillet or griddle over medium heat.
- Butter one side of each slice of bread generously. This is key for getting that golden, crispy crust—don’t skimp here! I’ve learned from my many grilled cheese experiments that soft butter spreads more evenly and browns better.
- On the non-buttered side of four slices, layer the provolone cheese and then pile on the thinly sliced roast beef. Top each with another slice of bread, buttered side facing out.
- Place the sandwiches in the hot skillet. Cook for about 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese has melted. You’ll want to watch closely so they don’t burn—nothing worse than a blackened sandwich when you’re hungry!
- Once cooked, transfer the sandwiches to plates and ladle some of the warm au jus into small bowls for dipping.
- Serve immediately, encouraging everyone to dunk away. My kids always get extra excited about this part—it makes eating feel like a fun, interactive experience rather than just dinner.
