  • 1 tablespoon balsamic vinegar
  • 1 pound sausage meat (pork or chicken work well)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Optional: 1/2 cup grated Gruyere cheese for extra flavor

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until they begin to soften, about 5 minutes.
  3. Sprinkle the sugar over the onions and continue cooking, stirring occasionally, until the onions are caramelized—about 20 minutes. Stir in the balsamic vinegar and cook for another 2 minutes. Remove from heat and let cool slightly.
  4. In a bowl, combine the sausage meat with the thyme, oregano, salt, and pepper. Mix in the cooled onions and optional cheese, if using.
  5. Roll out the puff pastry on a lightly floured surface and cut it into squares or rectangles, depending on your preferred pastry size.
  6. Place a generous spoonful of the sausage mixture onto each piece of pastry. Fold the pastry over the filling and seal the edges by pressing with a fork.
  7. Brush the tops with beaten egg to give them a golden finish.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and the sausage is cooked through.
