Ingredients
Scale
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 tablespoon instant coffee granules
- 1/2 cup brewed coffee, cooled
- 1 cup chocolate chips
- 1 cup powdered sugar (for frosting)
- 2 tablespoons butter, softened (for frosting)
- 2 tablespoons brewed coffee, cooled (for frosting)
If you’re out of instant coffee, don’t worry. You can substitute with a shot of espresso or simply add a bit more brewed coffee for a slightly different but equally delicious flavor.
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined.
- Add the eggs one at a time, stirring well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and instant coffee granules.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Stir in the brewed coffee and chocolate chips until the batter is smooth and well incorporated.
- Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool completely in the pan before frosting.
- For the frosting, beat together the powdered sugar, softened butter, and brewed coffee until smooth and creamy. Spread over the cooled brownies.
- Cut into squares and serve. Enjoy with a cup of coffee or a glass of milk!
