Just like my mom would do, we’re keeping it simple but flavorful. Here’s what you’ll need:
- 4 bone-in pork chops, about 1 inch thick
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- Salt and pepper to taste
If you’re out of fresh herbs, dried ones work just fine. And if you’re feeling adventurous, a sprinkle of paprika can add a delightful smokiness.
Instructions
- Start by patting the pork chops dry with paper towels. This helps achieve that perfect sear. Season both sides generously with salt, pepper, thyme, and rosemary.
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, gently place the pork chops in the pan.
- Sear the pork chops for about 4-5 minutes on each side, or until they develop a deep golden-brown crust. Remember, patience is key here—resist the urge to move them too soon!
- Reduce the heat to medium, add the butter and minced garlic to the pan. Let the butter melt and become fragrant, about 1 minute.
- Spoon the garlic butter over the chops continuously for another 3-4 minutes. This helps infuse them with that irresistible garlic flavor.
- Check for doneness with a meat thermometer; the internal temperature should read 145°F.
- Remove the pork chops from the pan and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring each bite is as juicy as can be.
