Ingredients
Scale
- 4 boneless pork chops (about 1 inch thick)
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Lemon wedges for serving (optional)
For a variation, you can swap rosemary with oregano or add a sprinkle of red pepper flakes for a little heat. The beauty of home cooking is making it your own!
Instructions
- Begin by patting the pork chops dry with paper towels and seasoning both sides generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the pork chops.
- Sear the pork chops for 3-4 minutes on each side until they develop a nice golden crust. Remember those stories my dad told me? A good sear is all about patience—let the pan do the work.
- Reduce the heat to medium and add the butter to the skillet. Once melted, add the minced garlic, thyme, and rosemary.
- Spoon the garlic butter over the pork chops, letting the flavors meld, for about 2-3 more minutes.
- Check for doneness—ideally, the internal temperature should read 145°F.
- Transfer the pork chops to a plate and let them rest for a few minutes before serving.
