  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 3 tablespoons vegetable oil or avocado oil (for a cleaner taste)
  • 4 cloves garlic, minced (the star of the show!)
  • 1 cup shredded carrots
  • 1 cup snap peas, trimmed
  • 1/2 cup sliced bell peppers (any color you like)
  • 3 green onions, sliced (white and green parts separated)
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons oyster sauce (optional but adds depth; substitute with hoisin for sweeter notes)
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly grated ginger (or 1/2 teaspoon ground ginger in a pinch)
  • 1 teaspoon sugar or honey (balances the savory flavors)
  • Freshly ground black pepper, to taste
  • Sesame seeds for garnish (optional but adds a nice crunch)

If you don’t have lo mein noodles on hand, spaghetti or linguine work just fine. I’ve made this recipe with whole wheat spaghetti for a slightly nuttier flavor and extra fiber, and my kids didn’t even notice!

Instructions

  1. Bring a large pot of water to a boil. Add the lo mein noodles and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside, tossing with a drizzle of sesame oil to keep them from sticking.
  2. While the noodles cook, heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken and season lightly with salt and pepper. Cook for 5-6 minutes, stirring occasionally, until the chicken is cooked through and just starting to brown. Remove from skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Toss in the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant. Be careful not to burn the garlic—it should smell amazing but not bitter.
  4. Add the shredded carrots, snap peas, and sliced bell peppers. Stir-fry the veggies for 3-4 minutes or until they’re crisp-tender. This is where you get that fresh, vibrant crunch that makes the dish sing.
  5. Return the cooked chicken to the skillet with the veggies. Pour in the low-sodium soy sauce, oyster sauce, sugar, and the white parts of the green onions. Stir everything together so the chicken and veggies are coated evenly.
  6. Add the cooked noodles to the skillet. Using tongs or two large spoons, gently toss the noodles with the chicken and vegetables until everything is well combined and heated through, about 2 minutes. Drizzle the sesame oil over the top and toss one last time.
  7. Remove from heat and sprinkle with the green parts of the green onions and sesame seeds if using.
