Gathering your ingredients is the first step to a successful meal, and for this skillet, you’ll need just a handful of staples:
- 1 medium head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 3 cups sliced mushrooms (I love using cremini or button mushrooms)
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley, for garnish
- Optional: Grated Parmesan cheese for serving
If you don’t have fresh parsley, dried works in a pinch. And if you’re out of Parmesan, a sprinkle of nutritional yeast can add that cheesy flavor without the dairy.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the cauliflower florets and sauté for about 5-7 minutes, until they start to soften and brown slightly.
- Add the sliced mushrooms to the skillet. Cook for another 5 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.
- Add the minced garlic, dried thyme, and paprika to the skillet. Stir well to combine, allowing the garlic to become fragrant, about 1-2 minutes.
- Season the skillet with salt and pepper to taste. Continue to cook for another 3-4 minutes, ensuring all the flavors meld together beautifully.
- Once everything is cooked and the cauliflower is tender, remove the skillet from the heat. Sprinkle with fresh parsley and, if desired, a bit of grated Parmesan cheese.
