- 4 boneless, skinless chicken breasts
- 1.5 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (optional for garnish)
Feel free to swap out the baby potatoes for whatever variety you have on hand, and if you’re missing an herb, don’t worry—use what you’ve got. Remember, home cooking is about working with what’s available and making it your own.
Instructions
- Begin by seasoning the chicken breasts with salt and pepper on both sides.
- In a large bowl, toss the baby potatoes with olive oil, garlic, thyme, basil, oregano, and half of the Parmesan cheese.
- Place the seasoned chicken breasts at the bottom of your crockpot.
- Add the potato mixture on top of the chicken.
- Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- Sprinkle the remaining Parmesan cheese over the top about 15 minutes before serving to allow it to melt.
- Garnish with fresh parsley if desired before serving.
Don’t worry if your kitchen gets a little messy—mine always does! It’s all part of the process. And remember, the crockpot is forgiving; if you need to let it sit a bit longer, it’ll still be delicious.
