- 1 tablespoon lemon juice (freshly squeezed for the best zing)
Substitution tips: If you don’t have Parmesan, Pecorino Romano can work in a pinch. For a dairy-free version, swap butter for olive oil and skip the cheese or use a dairy-free alternative. And if fresh garlic isn’t on hand, garlic powder can be used, but fresh really amps up the flavor.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- In a large bowl, combine the melted butter, minced garlic, smoked paprika, salt, pepper, and lemon juice. Stir well to blend all the flavors together.
- Add the peeled and deveined shrimp to the bowl. Toss gently to coat every shrimp in the garlic butter mixture. This step always reminds me of standing on that wobbly chair next to my dad—messy, a little chaotic, but full of excitement.
- Spread the shrimp out in a single layer on the prepared baking sheet. Try not to overcrowd them so they roast evenly.
- Sprinkle the grated Parmesan cheese evenly over the shrimp. I’ve learned the hard way that a generous layer makes all the difference—don’t be shy.
- Roast in the preheated oven for 8-10 minutes, or until the shrimp turn pink and opaque, and the Parmesan is golden and bubbling. Keep an eye on them; overcooked shrimp become rubbery, and nobody wants that.
- Remove from the oven and sprinkle with fresh parsley for a pop of color and freshness.
