- 1 pound steak, sliced into thin strips (flank or sirloin work well)
- 2 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package (20 oz) cheese tortellini
- 1 cup heavy cream
- 1 cup beef broth
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach
- 1 tablespoon chopped fresh parsley
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak strips, season with salt and pepper, and cook until browned on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the remaining olive oil and garlic. Sauté until fragrant, approximately 1 minute, making sure not to burn the garlic.
- Add the beef broth and heavy cream to the skillet, stirring well to combine. Bring the mixture to a simmer.
- Stir in the cheese tortellini, ensuring it is submerged in the liquid. Cook for about 7-9 minutes, or until the tortellini is tender and cooked through.
- Reduce the heat to low and add the Parmesan cheese, stirring until melted and the sauce thickens slightly.
- Return the steak to the skillet, along with the baby spinach. Cook until the spinach is wilted and everything is heated through, about 2 minutes.
- Garnish with chopped parsley before serving. Enjoy with your family around the table, sharing stories and laughter.
