- 4 slices of sturdy bread (sourdough or country white work great)
- 2 ripe honey peaches, thinly sliced
- 4 ounces sharp cheddar cheese, sliced or shredded
- 2 tablespoons unsalted butter, softened
- 1 tablespoon honey (preferably local or wildflower honey)
- 1 teaspoon fresh lemon juice (to brighten the peaches)
- Optional: fresh thyme or basil leaves for garnish
If you don’t have honey peaches, nectarines or even regular peaches will work just fine. For cheese, feel free to experiment—gruyère or mozzarella add a lovely melting quality. And if you want to skip butter, olive oil is a fine alternative for grilling.
Instructions
- Start by preparing the honey peach slices. In a small bowl, toss the thinly sliced peaches with honey and lemon juice. This wakes up their flavor and adds a lovely glaze. Set aside for about 5 minutes.
- Butter one side of each bread slice generously. This will help you get that golden, crispy outside we all crave.
- Heat a skillet over medium-low heat. Low and slow is key here to ensure the cheese melts without burning the bread (I learned this the hard way once when I was rushing!).
- Place two slices of bread, buttered side down, onto the skillet. Layer each with half the cheese, then a generous handful of honey peach slices, and finally the remaining cheese. Top with the other bread slices, buttered side up.
- Cook for about 4-5 minutes on one side, then carefully flip the sandwich. Press down gently with a spatula to help everything meld together. Cook the other side for another 4-5 minutes until golden brown and the cheese is melted.
- Remove from heat and let rest for a minute before slicing. If you’re feeling fancy, sprinkle fresh thyme or basil leaves on top for a pop of flavor and color.
One kitchen lesson I’ve learned is not to rush the melting. Kids (and adults) love that gooey cheese pull, but no one likes a burnt sandwich. Patience pays off here.
