  • 1 lime, juiced
  • Skewers (wooden or metal)
  • Salt and pepper to taste

If you can’t find jerk seasoning in your local store, don’t worry. Making your own is as easy as combining spices like allspice, thyme, and cayenne pepper. And if fresh pineapple isn’t available, canned works in a pinch—just be sure to drain it well.

Instructions

  1. Start by soaking your wooden skewers in water for at least 30 minutes. This prevents them from burning on the grill.
  2. In a large bowl, combine the shrimp, jerk seasoning, olive oil, honey, and lime juice. Toss everything together until the shrimp are well coated.
  3. Thread the shrimp and pineapple chunks alternately onto the skewers. I always enlist the kids for this part; they love creating their own patterns.
  4. Preheat your grill to medium-high heat. If you’re like me and sometimes forget to preheat, don’t worry, just give it a few extra minutes.
  5. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp are pink and opaque. The pineapple should have beautiful grill marks.
  6. Remove from the grill and let them rest for a couple of minutes. Sprinkle with a pinch of salt and pepper if desired.
