- 1 pound of button or cremini mushrooms, cleaned and stems trimmed
- 2 tablespoons olive oil
- 3 cloves of garlic, minced
- 1 teaspoon dried thyme (or use fresh if you have it on hand)
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Skewers (if using wooden ones, soak them in water for at least 30 minutes)
- Lemon wedges, for serving

Now, onto the fun part! Cooking these skewers is straightforward, leaving you more time to enjoy with your family.
- Preheat your grill to medium-high heat. While it heats up, you can prepare the mushrooms.
- In a large bowl, combine the olive oil, minced garlic, thyme, smoked paprika, salt, and pepper. Toss the mushrooms in this mixture until they are well-coated.
- Thread the mushrooms onto the skewers, ensuring they are snug but not too tight to allow for even cooking.
- Place the skewers on the grill and cook for about 10 minutes, turning occasionally, until the mushrooms are tender and have a nice char.
- Remove from the grill and squeeze fresh lemon juice over the top for an added zing.
