- 8 slices of your favorite bread (sourdough or ciabatta works great)
- 1 large zucchini, sliced
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces fresh mozzarella, sliced
- 4 tablespoons pesto (store-bought or homemade)
- Butter, for grilling
If you’re out of mozzarella, feel free to swap in provolone or even sharp cheddar. And don’t be shy about experimenting with the veggies. Mushrooms, spinach, or eggplant could make delightful additions.

Let’s get cooking! Follow these simple steps to create your sandwiches:
- Preheat your grill or a grill pan over medium heat.
- Toss the zucchini, bell peppers, and onion slices in olive oil, salt, and pepper.
- Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. This is a great time to share a story or two with your kids, just like my dad used to.
- Spread one side of each bread slice with butter. Flip them over and spread pesto on the unbuttered side of half the slices.
- Layer the grilled veggies and mozzarella slices on top of the pesto-spread bread slices.
- Cover with the remaining bread slices, buttered side out.
- Place the sandwiches on the grill or grill pan. Use a spatula to press them down slightly. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
