  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1 can water chestnuts, drained and chopped
  • 1 bunch green onions, chopped
  • Salt and pepper, to taste
  • 1 head of butter lettuce, leaves separated
  • Optional: Sriracha or chili sauce for heat

Feel free to swap the ground beef for ground turkey or chicken if you’re looking for a leaner option. And if you’re in a pinch, iceberg lettuce works just as well as butter lettuce.

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat.
  4. Stir in the soy sauce, hoisin sauce, rice vinegar, sesame oil, and ground ginger. Mix well to combine all the flavors.
  5. Add the chopped water chestnuts and half of the green onions. Cook for another 2 minutes until heated through.
  6. Season with salt and pepper to taste. If you love a bit of heat, now’s the time to add a dash of Sriracha or chili sauce.
  7. Remove from heat and let it cool slightly. Spoon the beef mixture into lettuce leaves, garnish with the remaining green onions, and serve.
