Ingredients
- 1 pound ground beef (85% lean works great)
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder (optional, for a little kick)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil or vegetable oil
- 1/4 cup beef broth or water (to help steam the sweet potatoes)
- Fresh parsley or cilantro, chopped, for garnish (optional)
If you don’t have sweet potatoes on hand, regular potatoes work too but the flavor won’t be quite as sweet and cozy. I’ve also swapped ground beef for ground turkey or even plant-based crumbles when I wanted a lighter or vegetarian-friendly option. The spices are easy to adjust based on your family’s tastes—sometimes I add a pinch of cinnamon for an extra warm note that reminds me of my mom’s magical tomato dishes.
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, for about 8-10 minutes until they start to soften and get a little golden. If you notice the pan getting dry, splash in a bit of water or broth to help steam the potatoes without burning.
- Push the sweet potatoes to one side of the skillet and add the remaining tablespoon of oil. Toss in the chopped onion and red bell pepper. Cook for 3-4 minutes until the onions are translucent and the peppers soften.
- Add the minced garlic and cook for another 30 seconds until fragrant—don’t let it burn! This little step always reminds me of my dad’s kitchen, where garlic was the secret weapon for flavor.
- Now, add the ground beef to the skillet. Break it up with your spoon or spatula and cook until browned and fully cooked through, about 6-8 minutes. Drain any excess fat if needed to keep the dish from getting greasy.
- Sprinkle in the smoked paprika, cumin, chili powder, salt, and pepper. Stir everything together so the spices coat the meat and vegetables evenly. This is where the magic starts to happen—the aroma will fill your kitchen with warmth.
- Pour in the beef broth or water, stir well, and cover the skillet with a lid. Let it simmer gently for another 5 minutes, giving the sweet potatoes a chance to finish cooking and absorb the flavors. You want them tender but still holding their shape.
- Remove the lid, give everything a final stir, taste, and adjust seasoning as needed. If you’re feeling fancy or just want a fresh pop of color, sprinkle chopped parsley or cilantro on top before serving.
