- 1 pound ground beef
- 2 medium zucchinis, sliced
- 2 large sweet potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped (optional)
If you’re out of sweet potatoes, regular potatoes work fine. For a leaner option, swap the ground beef with turkey or chicken.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until fully browned, about 5-7 minutes.
- Toss in the sweet potatoes and season with paprika, oregano, salt, and pepper. Stir well to combine, then cover and let cook for 10 minutes, stirring occasionally.
- Add the zucchini slices to the skillet. Stir everything together and cook until the sweet potatoes are tender and the zucchini is soft, about another 5-7 minutes.
- Finish with a sprinkle of fresh parsley if desired, and serve hot!
