- 1 pound sirloin steak, cut into 1-inch cubes (substitute with ribeye or flank steak if you prefer)
- 3 medium red potatoes, diced into 1/2-inch pieces (Yukon gold works well too)
- 2 tablespoons olive oil (or avocado oil for a milder flavor)
- 2 cloves garlic, minced (or 1 teaspoon garlic powder for a shortcut)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon smoked paprika (optional, but adds a nice warmth)
- Salt and freshly ground black pepper, to taste
- 1 small onion, thinly sliced (optional, but adds sweetness)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (or prepare your grill for medium-high heat). This temperature works perfectly to cook the potatoes through and get the steak tender without drying it out.
- In a large bowl, combine the diced potatoes with 1 tablespoon of olive oil, half the minced garlic, rosemary, thyme, smoked paprika, salt, and pepper. Toss until every piece is well coated.
- Cut four large pieces of heavy-duty aluminum foil, about 12×12 inches each. You’ll use these to build individual packets.
- Divide the potato mixture evenly among the four foil sheets, placing it in the center of each.
- In the same bowl, toss the steak cubes with the remaining olive oil, garlic, salt, and pepper.
- Lay the steak cubes evenly on top of the potatoes in each foil packet. Add sliced onions on top if using—they caramelize beautifully inside the packets.
- Fold the foil over the ingredients, sealing the edges tightly to create a packet. Make sure no steam can escape—that’s where the magic happens!
- Place the foil packets on a baking sheet and bake in the preheated oven for about 25-30 minutes. If using a grill, place packets over indirect heat and cook for the same amount of time.
- Carefully open one packet to check if the potatoes are tender and the steak is cooked to your liking. If not, reseal and cook for another 5-10 minutes.
- Once done, garnish with fresh parsley and serve immediately. Watch out for the steam when opening—the aroma will fill your kitchen!
