- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
If you’re missing an herb, don’t worry—dried herbs can be a decent substitute in a pinch. And if you’re out of Parmesan, a sprinkle of mozzarella works too.
Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to about 1/4-inch thickness using a meat mallet.
- In a bowl, mix together the ricotta, Parmesan, basil, parsley, garlic, salt, and pepper.
- Spread a generous amount of the ricotta mixture over each chicken breast.
- Carefully roll up the chicken breasts, securing them with toothpicks if needed.
- Heat olive oil in a skillet over medium heat. Brown the chicken rolls on all sides, about 5-7 minutes.
- Transfer the chicken to a baking dish and pour the chicken broth around them.
- Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
- Let the rolls rest for a few minutes before serving.
