- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 cup BBQ sauce (your favorite brand)
- 1/4 cup honey
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup frozen peas
- Chopped fresh parsley for garnish (optional)
If you’re out of chicken broth, water works just fine. Feel free to swap out frozen peas for any other veggie your family loves—corn or bell peppers are great options. Remember, flexibility is key in a home kitchen.
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes. My dad always said a good sear brings out the best flavors, and he wasn’t wrong!
- Reduce the heat to medium and stir in the BBQ sauce, honey, smoked paprika, and garlic powder. Stir well to coat the chicken pieces thoroughly, letting the mixture bubble for about 3 minutes.
- Add the rice to the skillet, stirring to combine it with the chicken and sauce. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and has absorbed most of the liquid.
- In the last 5 minutes of cooking, stir in the frozen peas. Cover again and let them steam through.
- Remove from heat, fluff the rice with a fork, and sprinkle with fresh parsley if desired. Serve it up with love!
