  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey
  • 2 tablespoons butter, for glazing
  • 1 tablespoon honey, for glazing

Instructions

  1. Preheat your oven to 400°F and lightly grease a mini muffin tin.
  2. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, eggs, and honey until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix, as it can make the poppers dense.
  5. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. Bake for 10-12 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  7. While the poppers are baking, melt the additional butter and mix it with honey for the glaze.
  8. Once baked, remove the poppers from the oven and immediately brush them with the honey butter glaze.
  9. Let them cool for a few minutes before serving warm.
