- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk (substitute with almond milk for a dairy-free option)
- 1/3 cup unsalted butter, melted
- 2 large eggs
- 1/4 cup honey
- 2 tablespoons butter, for glazing
- 1 tablespoon honey, for glazing
Instructions
- Preheat your oven to 400°F and lightly grease a mini muffin tin.
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, melted butter, eggs, and honey until smooth.
- Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix, as it can make the poppers dense.
- Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
- Bake for 10-12 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
- While the poppers are baking, melt the additional butter and mix it with honey for the glaze.
- Once baked, remove the poppers from the oven and immediately brush them with the honey butter glaze.
- Let them cool for a few minutes before serving warm.
