  • 2 large eggs
  • 1/4 cup honey
  • Extra butter and honey for brushing

If you’re like my mom and love to experiment with pantry staples, feel free to swap out the milk for buttermilk for a richer flavor or use coconut oil instead of butter for a dairy-free option.

Instructions

  1. Preheat your oven to 400°F and line a mini muffin tray with paper liners or grease it lightly.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and honey. Stir until the ingredients are fully incorporated.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix as this can make your poppers dense.
  5. Using a spoon or small scoop, fill each muffin cup about 3/4 full with the batter.
  6. Bake for about 10-12 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. While the poppers are baking, melt a little extra butter and mix it with honey for brushing.
  8. Once baked, remove the poppers from the oven and immediately brush with the honey butter mixture for an extra layer of flavor.
