The key to this dish lies in selecting the right ingredients that are fresh and vibrant. Whenever possible, I like to pick up my carrots and green beans from the local farmer’s market. It reminds me of how my mom could turn simple ingredients into something magical.
- 1 pound carrots, peeled and cut into bite-sized pieces
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the carrots and green beans with olive oil, honey, and minced garlic. Season with salt and pepper.
- Spread the vegetables evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the veggies are tender and slightly caramelized, stirring halfway through.
- If desired, drizzle with lemon juice before serving for an extra zing.
