  • 1 tablespoon soy sauce

  • 2 cups cooked jasmine rice
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrots
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges

If you’re out of jasmine rice, no worries—brown rice or quinoa work just as well. And if your spice tolerance is more “mild salsa,” feel free to adjust the sriracha to your liking. Remember, cooking is all about making it work for you and your crew.

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 7-9 minutes.
  2. While the chicken is cooking, whisk together the honey, sriracha, soy sauce, and apple cider vinegar in a small bowl.
  3. Once the chicken is cooked, pour the hot honey sauce over it. Stir well to coat all the pieces and let it simmer for an additional 2-3 minutes, allowing the sauce to thicken slightly.
  4. To assemble the bowls, start with a base of jasmine rice, then layer on the hot honey chicken.
