Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1/4 cup hot honey (store-bought or homemade)
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
If you’re missing some of these ingredients, no worries. You can swap out the hot honey for regular honey and a pinch of cayenne pepper. And if feta isn’t your thing, goat cheese works beautifully too. Remember, it’s about making it work with what you have.
Instructions
- Preheat your oven to 375°F (190°C). This will ensure everything cooks evenly and the chicken comes out juicy.
- In a small bowl, mix together the olive oil, smoked paprika, and garlic powder. This is your flavor base.
- Season the chicken breasts with salt and pepper, then rub them with the olive oil mixture. Make sure they’re well coated.
- Place the chicken breasts in a baking dish and drizzle half of the hot honey over them. Pop them in the oven for about 25 minutes.
- Remove the dish from the oven and sprinkle the crumbled feta over the chicken. Drizzle the remaining hot honey on top.
- Return the dish to the oven and bake for another 10 minutes, or until the chicken is cooked through and the feta is slightly golden.
- Garnish with chopped parsley before serving. Enjoy the smiles around the table as you serve this delightful dish!
Cooking is about intuition, so don’t be afraid to tweak the cooking time based on your oven’s quirks or your personal preference for doneness.
