- 4 veal shanks, about 1 1/2 inches thick
- 1/4 cup all-purpose flour, for dusting
- 1/4 cup olive oil
- 1 onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 2 cloves garlic, minced
- 1 cup dry white wine
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 teaspoons fresh thyme leaves
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
Feel free to substitute veal shanks with beef shanks if that’s what you have on hand. And if you’re out of white wine, a splash of apple cider vinegar mixed with water works in a pinch—another trick I learned from watching my mom create magic with whatever was in the pantry.
Instructions
- Preheat your oven to 350°F. Pat the veal shanks dry with paper towels and dust them with flour, shaking off excess.
- In a large Dutch oven, heat the olive oil over medium-high heat. Brown the shanks on all sides, about 8 minutes. Remove and set aside.
- In the same pot, add the onion, carrot, and celery. Cook until softened, about 5 minutes, scraping up any browned bits from the bottom.
- Add the garlic and cook for another minute until fragrant. Pour in the white wine and let it simmer until reduced by half.
- Stir in the diced tomatoes, chicken broth, thyme, and bay leaf. Season with salt and pepper.
- Return the veal shanks to the pot, ensuring they are submerged in the sauce. Bring to a simmer.
- Cover the pot and transfer it to the oven. Cook for about 1 1/2 to 2 hours, or until the meat is tender and falling off the bone.
- Before serving, combine the lemon zest and parsley in a small bowl for gremolata. Sprinkle over the osso buco for a fresh finish.
Cooking is as much about the process as it is about the result. Remember, it’s okay if you spill a little flour or if the shanks aren’t perfectly browned. Each step is a story, a memory in the making.
