  • 1 cup dry white wine

  • 2 cups chicken broth
  • 2 teaspoons fresh thyme leaves
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped

Feel free to substitute veal shanks with beef shanks if that’s what you have on hand. And if you’re out of white wine, a splash of apple cider vinegar mixed with water works in a pinch—another trick I learned from watching my mom create magic with whatever was in the pantry.

Instructions

  1. Preheat your oven to 350°F. Pat the veal shanks dry with paper towels and dust them with flour, shaking off excess.
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Brown the shanks on all sides, about 8 minutes. Remove and set aside.
  3. In the same pot, add the onion, carrot, and celery. Cook until softened, about 5 minutes, scraping up any browned bits from the bottom.
  4. Add the garlic and cook for another minute until fragrant. Pour in the white wine and let it simmer until reduced by half.
  5. Stir in the diced tomatoes, chicken broth, thyme, and bay leaf. Season with salt and pepper.
  6. Return the veal shanks to the pot, ensuring they are submerged in the sauce. Bring to a simmer.
  7. Cover the pot and transfer it to the oven. Cook for about 1 1/2 to 2 hours, or until the meat is tender and falling off the bone.
  8. Before serving, combine the lemon zest and parsley in a small bowl for gremolata. Sprinkle over the osso buco for a fresh finish.
