- 12 ounces spaghetti or your favorite long pasta (gluten-free pasta works well too)
- 1/3 cup extra virgin olive oil (use a good quality one for best flavor)
- 6 large garlic cloves, thinly sliced
- 1/4 teaspoon red pepper flakes (optional, but I love the subtle kick)
- Salt, to taste (about 1 teaspoon for pasta water and additional for seasoning)
- Freshly ground black pepper, to taste
- 1/4 cup chopped fresh parsley (optional, but adds a lovely freshness)
- 1/2 cup freshly grated Parmesan cheese (optional, but highly recommended!)
Substitution tips: If you don’t have spaghetti, linguine or fettuccine can step in beautifully. No fresh garlic? Garlic powder can work in a pinch, but try to avoid it if you can; fresh is best here. And if Parmesan isn’t your thing or you’re cooking for vegetarians, a sprinkle of toasted breadcrumbs adds a nice texture too.
Instructions
- Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta cooking water before draining.
- While the pasta cooks, heat the olive oil gently in a large skillet over medium-low heat. The key here is low and slow so the garlic gets fragrant but doesn’t burn—burnt garlic can turn bitter fast.
- Add the thinly sliced garlic to the olive oil. Stir frequently, letting it soften and turn a light golden color, about 3-4 minutes. If you want a bit of heat, sprinkle in the red pepper flakes now.
- Once the garlic is ready, remove the skillet from heat to prevent overcooking. Add the drained pasta directly into the skillet or transfer everything back to the pasta pot, pouring the garlic olive oil mixture on top.
- Toss the pasta vigorously, using tongs or two forks, to coat every strand. Add reserved pasta water a little at a time (about 1/4 cup increments) if the pasta feels dry. This starchy water helps create a silky sauce that clings to the noodles.
- Season with salt and freshly ground black pepper to taste. If you’re using parsley, stir it in now for a fresh pop of color and flavor.
- Serve immediately, topped generously with freshly grated Parmesan cheese, if desired. Nothing says comfort like that salty, nutty finish.
