- In a large soup pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned. This usually takes about 5-7 minutes.
- Remove the sausage from the pot and set it aside. In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the veggies are tender, about 5 minutes.
