Alright, let’s get cooking! These egg rolls come together in just a few steps, and the aroma that fills your kitchen will have everyone asking what’s for dinner!
- In a large mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, and onion powder. Mix until everything is well combined.
- Take an egg roll wrapper and lay it flat on a clean surface, with one corner pointing towards you. Place about 2 tablespoons of the cheese mixture in the center of the wrapper.
- Brush the edges of the wrapper with the beaten egg to help seal it. Fold the corner closest to you over the filling, then fold in the sides, and roll it away from you to form a tight roll. Seal the edges well.
- Repeat with the remaining wrappers and filling until everything is rolled up. This is where the kids can jump in and help—there’s something so fun about making food together!
- Heat about 1 inch of vegetable oil in a deep frying pan over medium heat. Once the oil is hot (you can test by dropping in a small piece of wrapper—it should sizzle), carefully place the egg rolls in the oil, a few at a time. Fry until golden brown, about 2-3 minutes per side.
- Once they’re crispy and golden, remove them and place them on a paper towel-lined plate to absorb any excess oil.
Remember, if you’d like a healthier version, you can bake these at 400°F for about 20 minutes, flipping them halfway through. I’ve done it both ways, and they’re delicious no matter how you cook them!
