- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan. If you have parchment paper, lining the bottom makes for an easy release.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside while you mix the wet ingredients.
- In a large mixing bowl, cream together the softened butter and sugar using an electric mixer on medium speed until it’s light and fluffy, about 4-5 minutes. This step is crucial; it’s where you’re incorporating air for a light texture.
- Add the eggs one at a time, mixing well after each addition. Don’t rush this step—each egg contributes to the cake’s structure.
- Now, add in the key lime juice, lime zest, and vanilla extract. Mix until just combined. The zest is where that vibrant flavor comes from, so don’t skip it!
- Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Be careful not to overmix; a few lumps are okay.

- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- While the cake cools, prepare the lime glaze by mixing 1 cup powdered sugar with 2-3 tablespoons of key lime juice in a small bowl until smooth. Drizzle it over the cooled cake.
