The key to this dish lies in selecting the right ingredients, which means opting for quality over quantity. Fresh shrimp is a must, as it brings an unbeatable sweetness to the dish. The lemon should be vibrant and juicy, and the garlic, well, it should be plentiful because in my book, there’s no such thing as too much garlic.
- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes. Remove shrimp from the skillet and set aside.
- In the same skillet, add orzo pasta and chicken broth. Bring to a simmer and cook until the orzo is tender and has absorbed most of the broth, about 8-10 minutes.
- Stir in the lemon juice, zest, and parsley. Return the shrimp to the skillet and toss everything together until well combined.
- Adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with extra parsley if desired.
